<p>Our ‘Food Poverty’ conference will put everything into context – discussing the causes of food poverty, and facilitating a wider policy debate about why poverty occurs and what can be done to start to tackle this massive issue.</p>
<p>These are challenging times. In just 1 year the demand for Foodbanks has risen by 170% and 1 in 5 people are now borrowing money to pay for their food. Alongside, there is a recognised obesity epidemic with children particularly threatened.</p>
<p><span style="color: #ff0000;"><strong><span style="color: #ff6600;">Change for the better will require 3 things..</span></strong></span></p>
<p><strong>1.New thinking from everyone</strong></p>
<p><strong>2.New programmes of work and;</strong></p>
<p><strong>3.New partnerships</strong>.</p>

<p><strong>They really do have the knack for creating some fantastic breads and we want to share their expertise and passion with the rest of you!</strong><span id="more-11299"></span></p>
<p>We want to show you how to create your own bread at home – just as good as any bought in a supermarket or bakery, with no expensive or fancy equipment – just good old dough and some elbow grease!</p>
<p>The first of our Basic Bread sessions will take place on Saturday 22nd June  from 10-4pm &#8211; a day full of Chef Demonstrations and practical cookery sessions where you can learn the basics of creating the best home-made breads including the perfect kneading techniques and proving times to create bread that is light, fluffy and most importantly tastes great!</p>
<p>You will have the chance to make at least four different breads during the day including both sweet and savoury doughs.</p>
<p>Everyone makes their own lunch and you will leave the session with simple yet creative recipes to try for yourselves at home!</p>

<h3>Vindaloo Beef Koftas</h3>
<p>Serves 2:</p>
<div class="ingred">
<h4>Ingredients&#8230;</h4>
<p>For the Koftas</p>
<ul>
<li>½ small onion, diced (or blended)</li>
<li>1 clove garlic, crushed</li>
<li>1 tsp grated ginger</li>
<li>½ long red chilli, finely diced</li>
<li>100g beef mince</li>
<li>25g fresh breadcrumbs</li>
<li>1 tbls of natural yogurt</li>
<li>1 tbls fresh coriander, chopped</li>
<li>2 tsp vindaloo spice rub (can be bought or we have a recipe below)</li>
<li>2 tbls olive oil</li>
</ul>
<p>For the Coleslaw</p>
<ul>
<li>1 large carrot, finely sliced or grated</li>
<li>½ small red onion, peeled and finely sliced</li>
<li>5 tbls shredded cabbage</li>
<li>1 tbls fresh mint, chopped</li>
<li>1 tbls natural yogurt</li>
<li>1 tbls fresh coriander, chopped</li>
<li>Salt and pepper</li>
</ul>
</div>
<h4>Equipment&#8230;</h4>
<p>A sharp knife, chopping board, grater, 2 mixing bowls, a baking tray and tongs</p>
<h4>How to make it&#8230;</h4>
<ol>
<li>Place the finely diced onion, garlic, ginger and chilli into a mixing bowl. Add the beef mince, breadcrumbs, yogurt and coriander and mix well. After a minute, add the spice rub and mix again.</li>
<li> Divide the mixture into four and roll each into a ball shape. Place into the fridge for 20 minutes to firm up a little.</li>
<li>Place a baking tray into a pre heated oven at 180C/gas mark 4. When the tray is hot, drizzle with a little oil then place the koftas onto the oven tray. Bake in the oven for about ten minutes, turning once or twice. You can also BBQ these by placing them on skewers and turning now and again until cooked (be careful as they can be delicate!)</li>
<li>While the koftas are cooking, place all of the ingredients for the coleslaw into another mixing bowl and combine well. Season to taste with salt and pepper.</li>

<h3>Vindaloo Spice Rub</h3>

<ul>
<li>30g cumin seeds </li>
<li>30g coriander seeds</li>
<li>10g black peppercorns </li>
<li>5g green cardamom seeds </li>
<li>5g whole cloves </li>
<li>5g ground cinnamon </li>
<li>5g chilli powder </li>
<li>5g garlic powder</li>
</ol>
</ul>
</div>
<h4>Equipment&#8230;</h4>
<p> frying pan, a wooden spoon, a pestle and mortar or spice blender, and a mixing bowl</p>
<h4>How to make it&#8230;</h4>
<li>Place the cumin seeds, coriander seeds, black peppercorns, cardamom seeds and cloves into a dry frying pan and gently heat the pan to toast the spices for about 3-4 minutes, stirring all the time to make sure you do not burn them.</li>
<li>When you have finished toasting the spices, transfer them to a pestle and mortar and grind them in batches until they are a fine powder. Transfer all of the mixture to a bowl. Now add the cinnamon, chilli powder and garlic powder and mix well.</li>
<li>The vindaloo spice rub is now ready to use. This can be rubbed into all meats. The spice rub will keep well for months if stored in an airtight container.</li>

<li>400g lamb leg steak</li>
<li>300g dried orichette pasta (or any other pasta you like)</li>
<li>5 tbls extra virgin olive oil</li>
<li>2 tsp smoked paprika</li>
<li>½ tsp ground turmeric</li>
<li>1 green chilli deseeded and diced</li>
<li>1 clove garlic crushed</li>
<li>1 red onion peeled and finely sliced</li>
<li>3 tbls lemon juice</li>
<li>3 tbls fresh coriander chopped</li>
<li>3 tbls fresh mint chopped</li>
<li>Salt and pepper to taste</li>
<li>300g tender stem or purple sprouting broccoli (cooked)</li>
<li>A handful of broad beans (cooked)</li>
<li>3 stalks of asparagus (cooked)</li>
</ul>

<h4>Equipment&#8230;</h4>
<p>A large saucepan, a colander, a baking tray, two mixing bowls, a sharp knife</p>
<h4>How to make it&#8230;</h4>
<ol>
<li>Bring a large pan of water to a rapid boil and cook the pasta according to the instructions on the packet. When cooked, cool under cold running water and drain.</li>
<li>Brush the lamb with a little oil and cook under a hot grill to your liking, then remove, shred the meat and allow to cool</li>
<li>In a bowl mix the olive oil, cumin, paprika, turmeric, chilli, garlic, onion, lemon juice, coriander and mint then add to a large bowl with the lamb and vegetables and mix well.</li>
<li>Season with salt and freshly ground black pepper and serve on a large plate</li>

<p>Recent figures have shown that one in four Britons (approximately 24 per cent) have cut down on the    amount of processed food they eat since the discovery of horse DNA in burgers on sale in major supermarkets.</p>
<p>This is creating a revival of fresh food purchasing as concerns grow over the safety and healthiness of processed meals, with traditional English fruit and    vegetables such as British apples,    garden peas, cauliflower and cabbage all growing in popularity.</p>
