Serves 1:
Ingredients…
- 225g Thai fragrant rice
- 50g creamed coconut grated
- 300ml hot water
Equipment…
A large pan, a wooden spoon, a sharp knife, a measuring jug, a disc of greaseproof paper
How to make it…
- Place the rice into a large pan along with the coconut, then pour over the hot water and bring to the boil
- As soon as the water starts to boil turn down the heat to its lowest setting and stir the rice, then place the disc of greaseproof paper over the rice and place the lid on the pan. Cook the rice for 10 minutes without removing the lid.
- After 10 minutes take the rice off the heat and leave for a further 10 minutes without removing the lid. Serve with Thai Green Curry
